Mexican/Spanish dishes(dessert, appetizer, main, dips, sides) that are made to be served cold....any ideas?

Chips, salsa, guacamole for an appetizer. A 7-layer bean dip can be cold. And for dessert flan. Sorry I can't think of any cold main dishes.
